Cheese-Veggie-Egg Pie with Ham "Crust"

I was looking at a lot of different crustless quiche and frittata recipes online and none of them were quite what I thought I was looking for. It was horribly hot and humid and I didn't really want to turn on the oven ... so the microwave, a silicone quiche dish, and a little creativity to the rescue! It totally satisfied my craving!

Packed in my beloved EasyLunchbox with a light english muffin (it was a high carb day for my carb cycling) and cream cheese:
Whole Pie: 810 calories, 52 fat, 70 protein, 18 carbs, 2 fiber (I packed 1/3 of the pie in the lunch)

Doctor Who - The Last Lunch for the 2nd

Grade, that is .... not Doctor. It's actually the first lunch for the 2nd Doctor!

John and I were watching "The Evil of the Daleks" the other day (which is largely reconstructed so some video, some still pictures, but all audio is in tact) and we decided that we needed Doctor Who lunches this week -- him for school, me for work. Since today happens to be the anniversary of that episode first airing we figured it was perfect! I even "Doctored" up our PlanetBoxes for the occasion!

 He gets the Rover ... I get the Shuttle:
Mine is chicken salad with cheese (meltable thanks to the silicone cup) and a low-carb spinach tortilla to make a wrap:
His is a PB&J Dalek with colby jack cheese "Exterminate," Alphabet Cookies "Dalek," fruit snacks, grapes & Bugles.

Jonathan the Human from Hotel Transylvania

John and I had a fun time snuggling and watching Hotel Transylvania Sunday afternoon. It's one that we've seen a couple of times before but we tend to rewatch the good ones! When trying to decide on lunch we realized that he hadn't had a Hotel Transylvania lunch yet in spite of the previous viewings. I expected him to ask for Dracula or Frankenstein .... but oh no .... he wanted Jonathan with his hiking gear!
Jonathan is drawn with natural food coloring onto a bologna and cheese sandwich. There are also SnaPea Crisps, ranch dip, fruit snacks, and grapes (with a bat pick -- I think it's Mavis!).

Stink and the World's Worst Super-Stinky Sneakers

It's been quite a while since we've read anything non-Harry Potter, but when John finished Prisoner of Azkaban he decided that he wanted to revisit his old friend, Stink Moody! We're really enjoying this third installment in the Stink series and John is just flying through it with glee. When I asked him what he wanted for lunch it really didn't surprise me at all when he asked for a stinky sneaker.

Packed in his PlanetBox Rover, the sneaker is drawn onto a bologna and cheese sandwich with Sixlets surrounding it. Stink himself is drawn onto Empire Jack cheese and his name is spelled out of Scrabble Jr Cheez-Its. He also has Bugles, grapes and fruit snacks.

Harry Catches A Snitch!

With only 4 school lunches left to be made for second grade, John has decided that we're going to go out with a bang! I thank/blame some of that on the extreme boredom I felt the other night at work which led to the thought of re-establishing the Facebook page for the blog ... and him catching me building some of the photo albums for the page and realizing that it's been a while since we've seen some of our favorite themes (or ANY theme) in our lunch bags.

Today he asked for one that's been pretty much a norm since February -- Harry Potter. He received an amazing birthday package from his Aunt Cristi on Saturday that included some Harry Potter plates and "really truly real" Harry Potter Jelly Slugs.

I discovered that one of my deviled egg trays had cracked and had the brainstorm that instead of tossing it out it would be a perfect pallet for our natural food powders! I've been mostly using food gels for so long because of the ease ... but now that I've got this set up we'll be set going au naturelle!

I scooped just an itty bit of each color in the slots ... added a couple of drops of water to each ... grabbed my toothpicks and requested Empire Jack cheese and went to town!

Working with the powders is quite a bit different than the gels but I think I'm finally getting the hang of it!

Along with the Slugs and cheese art, John has SnaPea Crisps with ranch dressing, colby jack letters, grapes, and a pb&j sandwich on wheat (cut to fit with a drinking glass!).
